Crepe Day

Crepe Day.
Apparently last Friday was the day.
And I remembered.
Crepes for breakfast filled with sautéed apples and cinnamon.
Crepes for lunch filled with diced chicken, BBQ sauce and alfalfa sprouts.
And crepes for dinner.
Seriously yummy.
Do you make crepes?
They are super easy and so very versatile.

Add ingredients to blender and mix until smooth.
I let the batter sit for 15 minutes or so.

1 cup flour
1/2 tsp. salt
1 1/4 cup milk
1/2 cup water
1 egg
Heat 7" - 8" fry pan over medium high heat. 
Brush a tiny bit of butter to coat bottom of pan.
Add a scant 1/4 cup of batter, tilting pan to coat the bottom of pan.
Let batter cook until golden on edges about 1-2 minutes....
When crepe begins to pull away from edges, use tongs to flip.
Cook 30 seconds more.
Slide onto a warm plat and continue.
