Butternut Squash Soup Recipe

Another successful recipe from Skinnytaste is her Butternut Squash Soup.
Yum!
And easy.
Did you know that you can use a vegetable peeler to remove the skin from butternut squash? 
 Super easy and less dangerous than using a knife on round objects. 
I like this squash also because the seeds are easily removed and there are not a ton of them.
 
Butternut Squash and Sage Soup
1 butternut squash, peeled, seeded and diced
1 carrot, peeled and diced
1 small onion, diced
1 celery rib, diced
6 cups fat free chicken or vegetable broth
2 garlic cloves, peeled
4 sage leaves
1/2 cup 1% milk
salt and pepper
Basically, dice all the veggies and add remaining ingredients to a pot. 
 Simmer until tender...or until you remember that you started soup earlier in the day.
I used my immersion blender to puree everything...including one sage leaf that I forgot to remove.
Stir in the milk, salt and pepper and voila...done. 
 
 
 Some parmesan cheese over top adds a nice touch if you want.. 
 Today I added some diced chicken for a complete lunch.
