These are terrific for the freezer. Just freeze on a sheet tray until hard and then place them in a freezer bag.
Since they are already cooked, just toss as many as you need with some marinara or pesto and serve over rice or pasta or spaghetti squash.
Whatever works best for you.
1.5 pounds ground turkey
1/4 cup shredded Parmesan Cheese
2/3 cup dry breadcrumbs
1/3 cup flat leaf parsley, chopped
3 TBL fresh oregano, chopped
2 tsp. fresh rosemary, chopped
1 tsp. dry mustard
1/4 cup tomato sauce
1/4 tsp. salt
3 garlic cloves, pressed
Smoosh everything together and form into balls...about small walnut size.
Bake in a preheated 400* oven for 13-15 minutes.
I bake them on a cooking rack set onto a rimmed cookie sheet.
A broiler pan would work as well...
if you can locate yours...
I never can, hence the rack and cookie sheet.
Once cool, freeze and stash for a quick supper later on.
