Mammoth Chocolate Chip Cookie


I love to cook..bake, not so much, but this cookie may have changed my mind. It came from One Ordinary Day and was fantastic! Michelle's photos and blog are gorgeous and everything looks so tempting...check it out. Anyway, I baked this in a cast iron skillet and it came from the oven with a crisp exterior and a soft and gooey interior...perfection!






Whisk
together:

2 cups flour

1 tsp baking soda

1/2 tsp. salt

Cream together:

3/4 cup softened butter

3/4 packed light brown sugar

1/2 cup sugar

Add 1 egg and 2 tsp. vanilla to the creamed mixture. Mix completely.

Add dry mixture and stir just until incorporated.

Stir in 1 1/2 cups semi-sweet chocolate chips.

Press into a 10" oven proof skillet, covering bottom. Bake in a preheated 350* oven for 35 - 40 minutes until golden. Transfer to a wire rack and cool 15 - 20 minutes.

I cut into wedges with a large pizza cutter and they were devoured after school...keep in mind, that the wedges should be small..very rich. They kept perfectly and were just as nummy the next day for lunch boxes. Make this soon...you won't be sorry.

Oh my...and with some quality vanilla bean ice cream after it comes out of the oven.....mmmmm..looks so delish as well as beautiful!
